On a Friday the pass is full, the floor is full, and the phone is a third job nobody can take. A collection order goes to voicemail. A table of four hangs up. Deliveroo still gets the order, at their commission.

Owners feel this in their bones. They rarely see it as a line on a P&L, because missed calls do not book themselves as a “lost cover” in the diary.

The number you can put on no-shows

Published UK hospitality data: one in twenty bookings does not show up. In sampled figures that is about £1,325 lost per restaurant per two months. Thirty-eight percent of restaurants still take no deposits at all.

What “answered” has to mean

A message-taker is not enough. The job is done when the call ends: the order is paid, the ticket is on the rail, the allergen note is attached, or the booking is in the diary with a deposit. Anything sensitive — allergens you are not sure about, a complaint — goes to a human.
